Roasted Tomato Basil Soup

  • 1kg ripe tomatoes, halved
  • 1 onion, quartered
  • 4 cloves garlic
  • 2 tbsp olive oil
  • 500ml vegetable stock
  • Handful fresh basil
  • Splash of cream (optional)
  • Salt & pepper

Method

  1. Roast tomatoes, onion and garlic with olive oil at 200°C for 25 minutes.
  2. Tip everything into a pot with the stock and most of the basil.
  3. Simmer 10 minutes, then blend until smooth.
  4. Season, stir in a splash of cream if using, and warm through.
  5. Serve topped with the remaining basil.
