Thai Green Curry

Fragrant, creamy coconut curry with vegetables and your choice of protein.

  • 3 tbsp green curry paste
  • 400ml coconut milk
  • 500g chicken or tofu, cubed
  • 1 cup mixed vegetables
  • 1 tbsp fish sauce (or soy)
  • 1 tsp brown sugar
  • Thai basil leaves
  • Jasmine rice to serve

Method

  1. Fry curry paste in a splash of coconut milk for 2 minutes until aromatic.
  2. Add protein and cook until sealed on all sides.
  3. Pour in remaining coconut milk, fish sauce and sugar; simmer 10 minutes.
  4. Add vegetables and cook until just tender.
  5. Stir through Thai basil and serve over jasmine rice.
