Loaded Avocado Toast

Crunchy sourdough piled with smashed avocado, chili and a jammy egg.

  • 2 thick slices sourdough
  • 1 ripe avocado
  • 2 eggs
  • 1/2 lemon, juiced
  • Chili flakes
  • Salt & pepper
  • Olive oil drizzle

Method

  1. Soft-boil eggs for 6.5 minutes, then cool in iced water and peel.
  2. Toast the sourdough until golden and crisp.
  3. Smash avocado with lemon, salt and pepper.
  4. Spread over toast, top with halved eggs, chili flakes and olive oil.
