Classic Shakshuka

  • 2 tbsp olive oil
  • 1 onion, diced
  • 1 red pepper, sliced
  • 3 cloves garlic, minced
  • 1 tsp cumin, 1 tsp paprika
  • 800g canned crushed tomatoes
  • 4-6 eggs
  • Feta and parsley to serve

Method

  1. Heat oil in a large pan and soften onion and pepper for 6–8 minutes.
  2. Add garlic and spices; cook 1 minute until fragrant.
  3. Pour in tomatoes, season, and simmer 10 minutes until thickened.
  4. Make wells in the sauce and crack an egg into each.
  5. Cover and cook 6–8 minutes until whites set but yolks stay runny.
  6. Scatter with feta and parsley. Serve with crusty bread.
