Moist Banana Bread

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 3/4 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1 1/2 cups flour
  • 1/2 tsp cinnamon, pinch salt

Method

  1. Preheat oven to 175°C and line a loaf tin.
  2. Mix mashed banana with melted butter, then sugar, egg and vanilla.
  3. Sprinkle over baking soda and salt, then fold in flour and cinnamon.
  4. Pour into the tin and bake 50–55 minutes until a skewer comes out clean.
  5. Cool 10 minutes in the tin before slicing.
