  • 200g digestive biscuits, crushed
  • 90g melted butter
  • 500g cream cheese
  • 100g icing sugar
  • 200ml whipped cream
  • Zest & juice of 2 lemons

Method

  1. Mix crushed biscuits with melted butter and press into a lined tin.
  2. Chill the base while making the filling.
  3. Beat cream cheese, icing sugar, lemon zest and juice until smooth.
  4. Fold in whipped cream gently to keep it airy.
  5. Spread over the base and refrigerate at least 4 hours before serving.
