Molten Chocolate Lava Cake

  • 115g dark chocolate
  • 115g butter
  • 2 whole eggs + 2 yolks
  • 1/4 cup sugar
  • 2 tbsp flour
  • Pinch of salt
  • Butter & cocoa for ramekins
  • Ice cream to serve

Method

  1. Preheat oven to 220°C. Butter 4 ramekins and dust with cocoa.
  2. Melt chocolate and butter together until smooth; let cool slightly.
  3. Whisk eggs, yolks and sugar until pale and thick.
  4. Fold in the chocolate mixture, then the flour and salt.
  5. Divide into ramekins and bake 11–12 minutes until edges are set but center jiggles.
  6. Rest 1 minute, invert onto plates, serve immediately with ice cream.
