Chewy Chocolate Chip Cookies

Ingredients

• 225g butter, softened
• 200g brown sugar
• 100g white sugar
• 2 eggs
• 1 tsp vanilla
• 320g plain flour
• 1 tsp baking soda, 1/2 tsp salt
• 300g chocolate chips

Method

1. Cream the butter with both sugars until light and fluffy.
2. Beat in the eggs and vanilla.
3. Fold in flour, baking soda and salt, then the chocolate chips.
4. Scoop onto lined trays, spacing well apart.
5. Bake at 180°C for 10–12 minutes until the edges are set.
6. Cool on the tray 5 minutes before moving — they firm up as they cool.
